- 1 1/2 cups (180g) grated carrots (about 2-3 medium carrots)
- 1 flax egg (1 tbsp ground flaxseed meal mixed with 3 tbsp hot water)
- 1 tsp vanilla extract
- 1/2 cup (75g) raisins (optional)
Instructions:
- Preheat your oven to 350°F (180°C). Grease your 10-inch bundt tin with a little olive oil and dust with gluten-free flour.
- In a large bowl, whisk together the gluten-free flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg.
