Vegan Gluten-Free Carrot Cake with Olive Oil (Bundt Cake)

  • 1/4 cup (60ml) olive oil
  • 3/4 cup (150g) organic cane sugar
  • 1/4 cup (60ml) unsweetened almond milk (or any plant-based milk)
  • 1/4 cup (60ml) water
  • 1 1/2 cups (180g) grated carrots (about 2-3 medium carrots)
  • 1 flax egg (1 tbsp ground flaxseed meal mixed with 3 tbsp hot water)
  • 1 tsp vanilla extract
  • 1/2 cup (75g) raisins (optional)

Instructions:

  1. Preheat your oven to 350°F (180°C). Grease your 10-inch bundt tin with a little olive oil and dust with gluten-free flour.
  2. In a large bowl, whisk together the gluten-free flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg.
  3. In a separate bowl, mix the olive oil and sugar until well combined. Add in the almond milk, water, grated carrots, flax egg, and vanilla extract. Stir until just combined.
